Why Sprouted?: All almonds have enzyme inhibitors the make them difficult to digest and block your body from absorbing all the nutritional value of the almonds. The only way to break down these enzyme inhibitors is to sprout the almonds.
Why Marcona?: All U.S grown almonds are required to be pasteurized by law - a process that destroys flavor, nutritional value and kills the almond which is meant to be a living food. We only use Marcona almonds from Spain - because they are not required to be pasteurized we are able to fully sprout them and break down the enzyme inhibitors.
