The Tapa Republic was formed in 2013 by the Co Founders of Bilbao Berria (Spain) following a successful number of years trading throughout the cities of Barcelona, Bilbao and Formentera.
Opening on the prestigious Regent Street, St James trading initially as Bilbao Berria with Masterchef Winner Ash Mair, before rebranding to "Norte" in 2016, specialising in large sharing plates from the north of spain.
In 2018 saw the company move from its London location and is now establishing its new concept "AppleYard" a community based restaurant, Wine Bar and Shop just outside London in Sidcup, delivering London quality food, wines and service to a local cosmopolitan audience.
AppleYard is a British product influenced by Northern Spain and the Provence (France).
During 2023 the company entered JV agreements to operate selected Tapas Revolution locations across the UK and acquired the remaining La Viña locations in Manchester and London.
