What is a natural wine?
Natural Wine is farmed organically (biodynamically, using permaculture or the like) by small-scale, independent producers, and made (or rather transformed) without adding or removing anything in the cellar.
No additives or processing aids are used and ‘intervention’ in the fermentation process is kept to a minimum - fermentation is indeed occurring using only native yeasts, the yeast already present on the skin of the grapes.
Neither fining nor (tight) filtration are used, while use of sulfites is kept to the minimum - usually from 0 to 50 mg/l.
The result is a living wine – wholesome and full of naturally occurring microbiology. Compared to conventional wines, natural wines usually have funkier, gamier and yeastier characteristics and a cloudy appearance.
